L'AOC - Appellation d'Origine Contrôlée (Controlled Designation of Origin)
In 1997, Switzerland established a legal basis for AOC for agricultural products other than wine known as the Federal Ordinance on AOC. This states that the name of a region or area may be registered as AOC to designate an agricultural product
  1. that originated in the region;
  2. the quality or character of which is due essentially or exclusively to that particular geographical area, including natural and human factors;
  3. that is produced, processed and developed within a delimited geographical area.
“L'Etivaz” alpine cheese was the first Swiss AOC listed in the federal AOC register in 2000.
