| Tasting L'Etivaz AOC Cheese | |

L’Etivaz AOC is a traditional cheese,
hand-crafted over a wood fire in each producer’s chalet using
raw, never transported milk flavoured by Alpine flora. After long
maturation, the aromas of this origin surge like childhood memories. It
has long been known that the rich flavour of L'Etivaz AOC originates in
the natural bouquet of the pastureland and the smoke of the spruce
fire. In 1766, Samuel Loup wrote the following about the region:
“Its main production comes from the finest floral Alpine
pastures to feed the vast number of animals that live there. The
resulting cheese is most excellent..." A good Alp cheese is always distinguished by its flavour rich in aromas, slightly fruity, evocative of hazelnuts. It has been scientifically proven that transporting milk deteriorates its quality; federal agricultural research stations, in cooperation with the Cooperative of L'Etivaz, have also proven that flora has a direct influence on the taste of milk and raw milk cheese.
