L'Etivaz AOC (data sheet pdf)
Raw milk hard Alp cheese made over a wood fire from May to October in over one hundred Alpine farms in the Alps and Prealps of canton Vaud. Clean, aromatic, fruity taste, with a hint of nuttiness that varies according to the different Alpine farm pastures. Ivory yellow in colour, long shelf life, 15 to 35 kg, ready to eat in 5 to 13 months. Summer production approximately 400 tonnes, or close to 20,000 wheels.

L'Etivaz AOC Biologique (organic) (data sheet pdf)
"L'Etivaz AOC" cheese made in facilities which meet the BIO-SUISSE organic regulation criteria year-round.
Summer production is approximately 15 tonnes.

L'Etivaz à Rebibes AOC (data sheet pdf)
“L'Etivaz” AOC cheese eaten in “rebibes” (shavings) after a minimum of 30 months of natural drying. Very hard cheese with strong flavour. This product is also produced organically (data sheet pdf).


Marketing: Approximately 7 tonnes per year
