The Cooperative was founded in 1932 to create
ripening cellars for producers in the region of L'Etivaz and market its
members’ cheeses. The first cellars were built in 1934 with a capacity for 3,200 wheels. A first expansion in 1974 added room for 3,500 more wheels; a second expansion in 1984 brought the total capacity to 14,000 wheels and a third expansion, in 2004, now provides space for 20,000 wheels. In 2008, the Cooperative has 72 members. It is administered by a committee of 7 members, all of them producers. Two commissions, one for quality and another for advertising, second the committee.
